Game-day potato wedges

I can't sleep, so I thought some late-night blogging might help :)

These are probably the most delicious thing I have ever made. Sure, they aren't that difficult, but it surprisingly took me quite a while to figure out how to cut the potatoes, how long to leave them in the oven, etc.  Cheese and bacon are EXCELLENT things to add too. I'm also a big fan of preparing hand-made foods rather than buying processed foods! These are a great frozen-french fry alternative.

Time: about 45 minutes--15 minutes for preparing, and 30 minutes for baking

Things you'll need:

• 5 or so medium sized potatoes (each potato yields 8 potato wedges)
• a large baking sheet
• aluminum foil to cover the baking sheet (optional). Make sure to put the dull side "up"
• LOTS of pam to spray the foil with (the wedges will stick like no other without this)
• a bowl to mix the wedges in with the vegetable oil 
• 4 Tbsp Vegetable oil (or enough to lightly coat the wedges)
• Garlic Salt (to your preference)
• Seasoned Salt (to your preference)
• Shredded cheese
• Bacon (optional) cut up into small pieces

Step 1

Gather your materials, and cut your potato wedges. The potatoes are lined up in the picture in the order that you would cut them. The last two on the right are just two of the wedges lined up. 

Step 2

 Pre-heat your oven to 350 degrees!

Step 3

Add your seasonings. First coat the potatoes with 4 Tbsp of vegetable oil, so that the seasonings can "stick" onto them. Then sprinkle your garlic salt, and seasoning salt.

Step 4

Line the pan with aluminum foil and spray it with a LOT of pam. If you think you have used enough, you probably haven't. Add more! If you want, spray the tops of the wedges with some pam also--it makes them crispier! Then line the pan with the wedges (like pictured) so they will cook evenly. Bake for 15 minutes.

Step 5

After 15 minutes has passed, take the potato wedges out and flip them. Using 2 forks works the best for me. Spray more pam, because it will have evaporated. Put them back in the oven for another 13 minutes.

Step 6

Add cheese and bacon (not pictured), and put them back in the oven until cheese is fully melted.

I don't have a picture of the final product, but trust me, it's delicious. Make these on game-day, and enjoy while watching your favorite team (cough...Sooners...cough) whoop some butt on the field!

WIP knit poncho

Studying for anatomy can get a little ridiculous at times, so I'm procrastinating hardcore right now. Here is my progress on a poncho I am making for a friend!

OU and OSU themed scarves

These bad boys are perfect for winter, especially here in Oklahoma. Trust me, when the next ice storm hits here (which will be sooner than you think!) you'll be wishing you had one of these scarves!

They are knitted as one large piece, and then folded and whip-stitched together to create a double-knit warm and cuddly feeling :) They are knitted with the softest (and most affordable) acrylic yarn I have ever found: I Love This Yarn! brand. They are 6'8" in length--plenty of room to wrap around at least twice around your neck. Also, each scarf is made with love and care. How can you beat that?! I also do custom orders for teams other than OU or OSU, but they will be $35 instead of $30 since my main products are my Oklahoma teams :]

These are my head accessory products that I have for sale right now that are already made. I will always be willing to do custom orders for you, but please know that these will probably be more costly (but not by much. I'm a college student--I know what it's like to live off of nothing for a while).The prices listed in this post do NOT include shipping and handling fees.  This headband was made with Berroco Vintage yarn. It is perfect for rainy days or on those "messy-wear-your-hear-in-a-ponytail" days. $15

 These owls are simply adorable! Just using a combination of cables on the left and right sides of the piece creates an owl outline. These are great for keeping your hair out of your face, and they compliment any outfit excellently :) $3 for 1 or $5 for 2!
